Can I overnight bulk rise Pain de Campagne FWSY?

Hi there, Newish to the sourdough wagon, have about 8 loaves under my belt. Fam loves the bread, so more dough is fermenting! 

My schedule was off today, so I'd like to do the bulk rise overnight in the fridge for the FWSY Pain de Campagne. After 4 or so folds in first 1.5 hrs, can I let the dough do it's bulk rise in the fridge? Then remove in AM for the shaping and final proof?

If so, how to do the final proof? Pour dough cold from fridge to divide and shape, then allow to rise in banneton until doubled? or does the dough need to warm before shaping or can I divide and shape straight from the fridge?
