Pistachio Paste?

I think that  I am looking for a pistachio paste suitable for cake making. I had a pistachio cake for my wedding and my sister— a talented amateur baker and I am a professional cook—wants to make that cake. She has tried a couple of brands and making her own paste and so far they have all fallen short on flavor. Does anyone have suggestions of a brand or type that I should be looking for? Is paste even the correct ingredient or maybe should it be used in combination with something else like an extract? Thank you in advance for any help.

They sell one. I trust them to have ingredients that taste good.

I use the pistachio paste from nuts.com for my macarons. It is like marzipan but with pistachios (it is rather sweet). If this is not what you are looking for, I agree with trying the pistachio flour (ground pistachios) as mentioned above.

Thank you, that’s very helpful. We did try the stuff on the King Arthur Flour site and was just the wrong product. Your recommendation sounds like what we’re looking for.

Fiddyment Farms makes a great pistachio paste they also have a pistachio butter that my work for you.

I made a pistachio paste recently for a pain de Gênes recipe, from Bruno Albouze.   I have some in the fridge now. 

From memory, it is simply roasted pistachios with a bit of neutral oil such as canola or grapeseed, and a bit of almond extract. Process in a food processor until a paste forms.  

This is Bruno's recipe, I'm sure there are others.   Google Bruno Albouze "citrus cake".   He has the recipe on his website and a video on YouTube.

Pistaccio emulsion by virginia dare , not available to the public at retail but works wonders.

as a baker I use ingredients, I don't make ingredients. To me its like trying to make my own gasoline. It wouldn't make economic sense but I suppose it could be done, or just order it.
