levain ratio build of 1:2 vs 1:5 etc

Hi All

 

Does the levain ratio build change the the flavor or bulk fermentation time of the final bread. I am comparing a few different recipes and books, and noticed that they all use different methods. Just trying to understand the process a bit more. Any input would be helpful.
