Take a trip & flip the script
Hello, friends.
My last blog entry found us, in the north-central Parisienne Region of Île-de-France. There we explored the high hydration signature baguettes of Philippe Gosselin. Won't you travel with me this weekend to Eastern Europe, and the tiny Polish town of Białystok? From Bialystok we will jet back to NYC, flip the script, and explore the low hydration "kuchen", (bialy) made famous by the NYC Jewish bakers.
