Panettone - Single Impasto

Hello Every body, 

My name is Lucas, and I'm new in the forum. I've been reading some panettone's recipe and I would like to know why panettone is usually made with two mixes?

It is possible to make panettone with a single mix? Using a stiff sourdogh starter.
