Never tried a butterscotch pie, I bet it is good.
This was a request from my wife. She loves butterscotch. This pie/filling came out very nice. With these types of fillings, pastry creams, fruit curds and the like, it is very important not to over cook. an over cooked pastry cream will become rubbery and flan like.
Give! At least for the butterscotch part. That recipe page is tantalizingly out of focus!
