Cinnamon rolls...Light as air..

Today’s bake cinnamon rolls using Hokkaido milk bread recipe but changed the flour from bread flour to 300g a/p flour and 100g 00 flour, and added sultanas ,the texture is amazing, best yet...doing happy dance in my Kitchen....lol

delicious...I had my eyes on cinnamon buns, swirls et al and I am soooo tempted to have a go...but once I start I think I probably will add it all to the waist line, if I start baking cakes...!!!!   I have not will power....  Kat

oh yes they are lovely, just had to sample a wee bit...and I did have a really good excuse to make these...lol granddaughters are coming for dinner, so had to have something nice for them. But I know exactly how you feel, but thinking these are less evil than cake...but maybe not...lol:-/

Well done.  Are these YW, yeast or SD or some combo?

Yes they are yeasted 2 tsp in 400g flour mix. Sorry don’t know what YW means.....but I am very happy with them.

Your cinnamon rolls look so good! I would be doing a happy dance too!

I have been trying to make my old cinnamon roll recipe with my Ankarsrum, but I just can't seem to get the dough kneaded to the consistency I want even after 25 minutes with the roller. So, I found a milkbread cinnamon roll recipe, and I still have to knead by hand which defeats the purpose of having the Ankarsrum.

My recipe calls for all bread flour. Can you tell me why you decided to use a combination of AP and bread flour? Is 00 bread flour? What changes did it make to your recipe?

My milk bread cinnamon rolls had the flaky layers like milkbread is supposed to have when you pull them apart, but they still weren't as good as the ones I make when kneading by hand. So obviously, I am using the Ankarsrum incorrectly. 

What is sultanas? 

I didn't take a picture of my Hokkaido cinnamon rolls, but I have a picture of my Hokkaido milkbread dinner rolls I made last week. The thin layers are there in the cinnamon rolls when you pull them apart, and they spring back, but something is just not right, and I think it is the kneading.

Any advice? Thanks.
