Yeast water - can I use Raspberries

I have plenty of raspberries in the garden at the moment, oranges and lemons too.  Is this an option to get a yeast water going?

Squash a hand full in a cup of water and go for it!

it a boost with some honey and lemon juice?  I think I read somewhere to do that but it was using apples & raisins.  I will pick some this afternoon and get it started. Glad it is as simple as that.

thanks Mini

You sure can. Look for the bluish coating on them, that's the good stuff. Toss a few in a jar, won't need many, squash them a bit, add a little water and some flour. When I did this with backyard blackberries, it came to life quick. But, it'll still take a little while to get the right balance of buggers similar to a flour starter. What I found interesting was, flour starter took a few to get healthy active yeast. The BlackBerry starter was the exact opposite, yeast comes to life first, and fast. Then you wait on the other guys to get going.

I have just picked up your post, I have done as Mini suggested. I think I will hold off with flour until I am ready to make a levain as I think adding flour would make it more of a sourdough type starter. but thanks for your thoughts

That it would, I thought that might have been the end goal. Yeast water didn't hit me right off. It will make a mean starter too.

that will contaminate it and it will be usless as yeast water goung forward.  Squish some up in a jar with a lid and add a like amount of water by wieight.  Shake, shake, shake every 4 hours or so and follow the yeast water primer

and created Rosie (what else could I call her given the gorgeous colour).

I added a good handful of raspberries (squashed) to 1 cup of bottled water and mixed.  Now I will wait! and shake! I have just read your post dabrownman, so will add a few more berries I think to bump it up a bit.  will watch, shake and add some honey in a few days.

I have read the primer, hence the question re orange juice.

thanks dabrownman

At dinner time tonight I thought yes, something starting to happen.  Just had a look, and things have changed. Definitely smells different with a faint whiff of alcohol?, fruit has risen in jar so I have added a teaspoon of honey and given it a good stir. here she is again

Not sure what to expect now .... will still keep it on the bench overnight and see what she is like in the morning! so exciting!!
