Tartine loaf using heritage flour from Bluebird farms
I'm getting a bit better at the Tartine Country Loaf, and now would like to try using a heritage flour. Bluebird farms seems to be the best in terms of pricing. They have Organic Pasayten Hard White Flour and Organic Methow Hard Red Wheat Flour in addition to Emmer flour .... what would be the healthiest and still make a great loaf?
