The Rye Baker: In Defense of First Clear

Thanks, Stan, for the education!  I have some first clear in the cupboard that I bought for rye breads, but I, like you, did not understand the reason behind it.  I never tried to make bagels out of it, but still, I didn't get it.  Thanks for the contribution.
