Curious about All Purpose Unbleached flours

Curious about All Purpose Unbleached flours

So - regarding All Purpose Unbleached flours -- General Mills AP/Unb; Trader Joe's; Bob's Red Mill - Are these similar? Any recommendations for or against? I am just starting baking again. I have been using KAF and Bob's Red Mill for my whole wheat and pastry, but not sure about the white flours. I have KAF white whole wheat, but let's say I'm making challah? (too many choices). Thanks

with Pillsbury, General Mills, Winco, LaFama and Smart & Final AP flours making bread with LaFama the best..

Just another data point - flour hasn't been bleached in the UK since 1998 and it doesn't seem to have affected its ability to make good bread (and may will say it's all the better for being unbleached!)

Can't help with the brands though - I'd pick one and if it bakes well then stick to it.

(And after a few years I've just changed to a new flour mill - and this mornings bake was the first production run with one of the new flours - the breads didn't come out quite right, but the were sellable - I just have to tweak a few things)

Gordon, thanks. Unbleached is fine by me - I am just looking at some of the 'regulation' white flours out there. I don't care about specialty whites but don't want just fluff either.

rgconner had a comment on another thread re Shepards flour & Cash & Carry.  Went out to look and noticed C&C carries mostly bleached flours.  I am a complete newby and had been using unbleached (read somewhere to use unbleached).  So I appreciate your comments re bleached vs unbleached.

Yeah, I am unsure if the Shepard at C&C is beached or not, it is pretty white, but not as white as White Lily.... on the other hand, Shepherds website does not list a bleached product, only unbleached. 

I can't imagine Forkish would do all that he does, then use bleached flour. Just my 2c.
