How much bread is enough?

Profile picture for user chrisf

I'm going to bake ciabatte for a party of 40-45 people. It will be for beef/sausage sandwiches and I want enough bread for 2 per person. How much dough weight would be good for each bun? I was thinking 120-150 grams per bun. Too small/big?

thanks

chris

However, assuming that you wanted a serious answer, 120g (dough weight) should give you a good big bun for sandwiches.

but 120g is a good "soup bun" size for the rolls I occasionally do.

Good luck wrangling 6Kg of ciabatta dough...

where the size is huge for the actual weight because of the huge holes - even 100 g should be plenty for a roll.  i use 120 g for a large enriched hamburger bun that has tiny holes - because they don't puff up as much as ciabatta dough does.

Sorru to be differnt in the response that mught confuse you.

Happy baking
