Spelt owl buns
Thinking about a sandwich bun, why don't we put the sesame seeds in the sides and then we create a space on the top for making a decoration with a stencil?
This is one of the varieties of bread we made in a course with masterbaker Josep Pascual (https://www.facebook.com/Josep.Pascual.forner).

Another option is to 3d-print a stencil. Grab a 3d-printer file off the web, or make your own. Libraries, makerspaces, universities, community centres often have 3d printers where you can print something off for a couple $.
You can print in a food-safe PLA filament.
If you're hyper sensitive to food safety issues, feel free to disregard.
