I've tried it as I've been asked to make GF bread in the past.... It's Bread Jim, but not as we know it.... It's more like a yeasted cake as its made with eggs and milk. However its a reasonable quick fix for coeliacs who need it.
Phil Vickerys GF cook book has lots of stuff with his own flour blends - assuming you can get the component flours. Andrew Whitley has a GF section in "Bread Matters" too - using a rice based sourdough starter.
..be a step to far for someone doing their first GF loaves? I'd suggest following Dove Farm's own recipe (on the side of their packet) first then experimenting with blends once confidence was built up.
My GF daughters and grandson rely on Cup4cup for all their baking. I believe that it can be procured in 50 lb bags. All these products are so expensive.

... GF bread four blend. It comes with xanthum gum already added, so no need to try to work out the tricky proportion of XG to flour.
