Swedish Pancakes

When I think that we used to buy boxed "Swedish Pancake Mix" I now blush.

These turn out to be extraordinarily simple.

 

3 eggs
1 1/4 c. milk
3/4 c. sifted all-purpose flour
1 tbsp. sugar
1/2 tsp. salt

Beat eggs until thick and lemon colored.
Stir in milk.
Sift dry ingredients; add to egg mixture, mixing until smooth.
Drop batter onto moderately hot buttered griddle.
Spread batter evenly to make thin pancakes.
Turn when underside is light brown.
Sprinkle with sugar; stack.

Pass lingonberry sauce.

I tend to make them too large and then roll them up - otherwise I am asked for seconds too quickly!

I usually have to double the recipe because my kids love them so.

That's too funny; we had almost exactly the same thing growing up, but we called them Norwegian pancakes (there's not a drop of Norwegian or any other northern european blood in my family!). They were a favorite Sunday night supper, I think my Mum had to double the batch.

They're still a favorite, with the next generation. When my son was still learning to talk, they were dubbed roll-up pancakes, and were later the first thing he learned to cook for himself...

That's also funny!  I grew up calling them German pancakes or German egg pancakes.  One of my first recipes for "moving out" of the nest was the "egg pancake for one."  Then as the family grew, so did the amounts.  When I came to Austria, there is also a similar pancake in my husband's family.  When I test flour, I make a pancake first.  It's one easy breakfast or snack or meal.   I've also passed it on.....
