Been some time since I have posted. My Ciabatta Bread has ?? always been close to perfect to a long time to learn how to handle it.  I get a good rise in my proofing.  Every thing looks normal.  For some reason when I put it in the oven I do not get my oven spring. I gently slide into the oven onto a pizza stone. . Some times I spray with a few shots of water .  It does not have the oven spring I feel it should. Crust is nice good crumb moderate holes . I have tried getting it ready when it has proofed about 2 3/4 thinking it might be over proofing. That did not seem to make a difference.  I have seen many loaves that are flat after baking and posted here . I feel I get maybe only a moderate spring.  Still tasted great I just do not have a nice puffy slipper look.
