stainless steel mixing bowl
my kitchen aid mixer has a stainless steel mixing bowl , and I can't find my beater or dough hook only my stainless whisk
can I use these to mix and ferment my sourdough with ?

Your whisk will not go far when making dough, its job is to incorporate air in light, liquid-ey stuff like egg whites or cake batter. If your attachments are truly missing, there must be orphaned attachment adoption resources out there... Someone with contacts will come along this way soon...
Until then, use your SS bowl and mix by hand. No excuse to not bake!

not an excuse its hear somewhere got to keep hunting , I have seen them for sale in a local food store , and on e bay
but I have a big stainless spoon to use till I find it
for my sourdough loaves. Just my hands....pinch, lift, stretch & fold
You can not use your whisk for the dough you need a dough hook to mix the dough.
What do you want to do with the stainless spoon, you can not nead or mix dough with a spoon.
Get in their with your hands to mix and knead, it does not take very long and you do get a feel for what the dough should feel like , always a plus to know how a dough should feel and look when kneaded well.
I got a danish dough whisk to start mixing then I will use my hands to finish it , also got a plastic dough scraper to help get it out of the bowl
I just got one recently. I use it to stir up the flours before/while adding the water before autolyse. Then I just get in there with my hand pinching and lifting. Sounds like you are on the right track.
I use mine for my Rye breads which have the consistency of thick cake batter.
