Milk-based sourdough recipes wanted
I inherited the milk-based sourdough starter that belonged to my late mother. The starter has been resurrected and i've gotten better at making loaves. I have recipes for the usual bread, waffles, pancakes, biscuits, chocolate cake, and applesauce cake. Are there other recipes for traditional milk-based sourdough?
This was used in the family from way back and is maintained by volume of ingredients rather than by their weight. I was always told that recipes for milk-based starter and water-based starter are different.
Thank you to anyone who can add to my small collection of milk-based-starter recipes.
You can use any recipe designed for sourdoughs. The only difference between milk and water is the milk solids which constitute roughly 10% of the milk. That means for any water sourdough recipe, you may have to add 10% more milk to the liquids to get the right consistency. :) The world is open!
Thank you. Mini Oven! I hadn't known that difference. I see some experimentation ahead because I've seen many enticing sourdough recipes on TFL.
I'm not interested in converting my recipes to the weight method for ingredients and so hoped to find some more traditional recipes. The ones I have all require baking soda among the ingredients. The request remains open as I try some of the recipes on this site.
Thanks again.
