Bolos de arroz. Portuguese Rice cakes. 125 gr sugar, 70 ml oil butter or margarine, 3 large eggs, 150 grams of rice flour, 50 g of wheat flour, lemon or lime zest, and 8 grams of baking powder. Mix in this order, the sugar with the fat until emulsified. Continue mixing, adding the eggs one at a time. Add the rice flour, lemon zest, wheat flour and baking powder. Bake at 180 degrees C until cooked.
Those look great. I might try these, though I have a few questions. Did you add a topping to get them to have that sugary crust or is it a result of the batter? Also, would the crumb be strong enough for the addition of nuts, fruit, or chocolate? thank you.
Yes, I have dusted with some granulated sugar before baking. I have never made it with nuts, fruit, or chocolate, I will try it.

I made Bolos de Arroz this morning. I took the zest from about 1/4 of a lemon, which seemed to be the perfect amount.
I think I overbaked them as the crust was quite crusty (I assume due to the amount of sugar). When I make them again I will take them out when they just turn golden. I will also spoon the batter into the muffin tin instead of using a silicone spatula.
