Cozonac my way, 100% sourdough
Cozonac is a sweet bread, often compared with panettone. It is traditional from Eastern Europe (Romania, Moldavia, Bulgaria ...). This time I made it with same quantity of sourdough and flour. To avoid sourness I made a very lactic sourdough.
100% liquid sourdough, 100% bread flour, 12,5% milk, 30% sugar, 12,5% egg, 20% yolks, 15% butter, 10% oil, 2% salt and 30% candied fruit, nuts or chocolate.
