I had hand reconstruction surgery a month ago so I can't cook, bake, or type except on a tablet with a stylus, but I want to share my stuffing bread recipe. I made 2 loaves before surgery, then tore them into chunks and dehydrated them. Think Pepperidge Farm make-it-yourself, AKA instant stuffing. Come turkey day, I'll have hubby add celery, onion, pecans, dried cranberries and chicken broth to moisten a small amount, use a scoop to portion it into a muffin pan, and bake it. Leftovers can be frozen then vacuum sealed for an encore later. Top with gravy, and they are delicious! I hope some of you will try this bread! I mix it in my KA heavy duty mixer. Let rise once, then bake. Next time I will do it in the new Zo.
Thank you, FlyinAggie, for the extra time and energy it took to post your recipe. It sounds great! Happy Holidays to you and yours!

I had hand surgery a few years ago (both hands-one 2 weeks after the other) and that was when I discovered batter bread. It is more like a cake dough consistency and made in my mixer. I discovered if I put the pan in the sink and tipped the bowl on its side, I could get most of the batter into the pan.If anyone was home, they were recruited into doing the final bowl scraping. If not, I just did the best I could. I could not live without my breakfast loaf. I suggest you prepare the pan well so it tips right out. I used a homemade oil and lecithin mix to coat the pans but there are sprays out there you can buy that have the same ingredients.
As I was recovering, I discovered that dough handling or mixing helped to strengthen my hand and aided in recovery. I hope things go well for you and you recover quickly.
The batter bread sounds really interesting! Where can I find a recipe?
I doubt we had the same surgery, as I will be in the brace for 3 months before I can begin physical therapy. I will be in the brace totally for 6 months minimum. This was a carpo-metacarpal arthroplasty, meaning the thumb joint near the wrist was rebuilt from a forearm tendon that was split in half then jelly-rolled into the space left after a tiny bone was removed. Then holes were drilled in the lowest thumb bone and the hand bone that connects to the index finger, and a cable inserted in the holes which will tie the two together to support the thumb so it can't extend too far. I will attain full function, if I am very diligent with PT, in 9 to 12 months.
Meanwhile, my non-cooking husband is learning to cook, including baking the tang zhong bread. The last pan he baked cost a lot. As he took the pan out of the oven, he dropped it on my glass top stove, breaking it. It can't be replaced, so he will have to buy me a new stove. Let's just say I give thanks daily for a slow cooker, my Zo, an electric griddle, and a microwave. So, I have lots of time to hang out here to study!
