Baker's Pride
So I have access to a really old Baker's Pride pizza oven at the place I work and am about to do some experimenting with it later on in the week. The only information I could find on it was that its a model E541 with voltage of 240 and 12000 watt. There are vents in the back that you can close to keep in the steam I would be putting into it, but no steam injector (pretty sure this oven is from 1976.) Basically my plan is to load the loaves and then steam all around them with a gallon size garden sprayer. Anyone else tried this method with an oven similar to this? I know I've seen videos of people steaming like that with an old Blodgett pizza oven, so maybe that's similar? Any feedback would be good, trying to bake some on Thursday with it.....thanks guys!

You might want to try steam towels or pans in the back of the oven so you don't hurt the oven. Spraying in the oven can be damaging to the metal and the stones but steam pans should work pretty good. Then just open vents 1/2 way through the bake and finish em off.

Do you think two or three pans with water toward the back of the oven would be sufficient? and if doing towels....do you just put wet towels in a metal pan in the oven?
