How long do I wait?
Hi Everyone,
I just started a sourdough starter just over 2 weeks ago. It seems to be going ok and is doubling. I was wondering how long I have to wait for it be strong enough to bake a bread?

by making a loaf and see what happenms. I'm guessing no worries since it is doubling.

Lots of useful info on here. One method of creating a starter (Professor Calvel method) claims to have a useable starter up and running in 2 1/2 days ! Reading through the material there is some mention of good and bad bacteria/organisms that can be present in early starters and the importance of allowing the good to get rid of the bad. Happy reading !

I say go for it. I once used one that was only 4-days old and it produced beautiful loaves. I think the key now is in building it properly before baking with it.
I have decided to wait another couple of weeks. Will let you know results.
