Lye Pretzels

I dip my pretzels in lye water I think they come out much better than using baking soda. I have read some recipes that say to use boiling lye water to dip pretzels. I don't want to start another whole dicussion about lye vs baking soda or the dangers of using lye. Just interested if anyone has tried using boiling lye water and if there is any difference from just plain lye water

I have made pretel rolls several times and the directions I follow are to boil the water after you first mix the lye in the cold water.  Once it comes to a boil I shut off the heat otherwise you risk having the lye water bubble up and splatter on you which is not a good thing.

Have you tried them without boiling the lye. If so have you notice any difference. I'm convinced that using lye makes a much better pretzel. Just wondering before I try it, if boiling the lye would be an improvement

No I have not, but the boiling dissolves the crystals so think you really need to do that.

The lye will dissolve in the water without boiling, it just takes a little longer.
