Oat Fiber (not Oat Bran)
Has anyone worked with oat fiber in a white bread recipe? I'm trying to produce a high fiber low calorie white bread. I like whole wheat but would prefer all white or a blend. When using oat fiber you need to add more water and would like to know the ratio of flour to water as oat fiber will absorb up to 7 times it's weight. You can substitute 25% of the flour in a recipe. I've ordered some and it will be here soon...so I guess it will be trial and error :)
I've done a search.... but mostly have found information on low carb......which is not my intention.
