"old dough" (pate fermentee)
Hi tfl'ers...
A quick question about "old dough", I understand the logic of it and how to use it.... but what I would like to know is, how long can the old dough be kept in the fridge before it's used? Also, is there a minimum time it should spend in the fridge before being used?

I have found 3 days in the fridge is the limit. And 1 day the minimum.
