Holiday Sourdough Add-ins?
Hello friends. I'm looking for suggestions for add-ins to make a holiday special out of your regular sourdough bread. Particularly, I'm wondering about ratios. For example, I'm fond of adding white chocolate chips with pecans. If 10 lbs flour = 100%, I add 15% pecans and 30% white chocolate chips.
I've thought also about cranberries with orange zest, but don't know what ratio to use. Or there's the standard cinnamon & raisin. Any other thoughts?
Thats going to be heavy, don't you think?
...perhaps the ratios were reversed, with 15% white choc, 30% pecans? The formula was the standard for the bakery I worked for and from whom I stole it. It was our best seller. The white chocolate mostly melted away into nothing, leaving just residual sweetness and caramel flavors on the crust.
