What kind of rye do you think this is? Or can you read Russian?

I have no idea what kind of rye this is, but adore it! I m about to have a big fight with the unpleasant woman who owns this store! She is such a @&$! Anyway I am going to slip in and buy what I can before I blow. I have another source for everything but this flour! My favorite rye to bake with. Sadly I can not read Russian
Anyone know? Sorry this is sideways but flikr is hard for me to understand since it is in an unknown to me language..i am just lucky to have this!
Thank you for any help

It's a bag of medium rye.

It IS a bag of medium rye flour, weighing 1 kg, which is 2.2lb. On the back it just states nutrition contents, just like on the english label you've posted. Sorry you had to deal with a ticked off russian woman. They are the worst! (I am one, so I know). Hope this helps. :)

yep, from the little I know about the US classification of rye flours, this is medium rye. In the UK it would probably, but not necesserily, be equivalent to light rye.

Only one thing to add, in Russia this type of rye would tipically have the ash content of 1.45. Not sure if this would be of any use to you.

Are there any other Russian/Eastern European shops in your area? If so, you could ask them if they stock any OBDIRNAYA MUKA

Thanks so much! This brand is lovely! You don't really have to " work" up the gluton When I mix in heavier WW and the flavor is perfect for my use...not yo mention it is a buck 99/ bag!

Oh she WORKED me up when my husband and I caught her changing outdates on meat, then she went ballistic on me when I gave her back salami had over labeled! With a new out date! I did not notice it until I got home and saw there was a double label on the meat, so I pulled the top one off and found an earlier outdate! I brought it back with my reciept ..she screamed, I screamed..long story short, my friend from Ukraine went with me and validated my concerns with the meat. We called her on it (and sent photos to the health dept) she flipped out and tossed us out of the store...before I left I took my flour to the register and bought it from a darling young girl . The same crazy lady tried to run me over twice in her parking lot screaming at someone on the phone.. This market could/should/would be a " destination" for cooks and bakers! But the first thing you will note is very offensive to me and mine anti gay propaganda right in the doorway, the exact reason I will not give this place a good rec to my friends!
So while this is just " medium rye" it is really good workable fresh, moves off the self quickly, not found the same elsewhere, rye at a great price,

while I will go to great lengths to get ingredients, she, after one more run,( alone because no one else will go with me now!) no longer will make me break my ethical code! I feel as big a self serving hypocrite as she is!
The funny part, she always greets me and while she yells at me, is never surprised when I come back!
Wow tmi?

lol certainly not TMI :) really sorry you had such a terrible experience. Unfortunately my former compatriots can be rather arrogant, and also rather intolerant. Trust me we're not all like that (I hope!).

It may be of little comfort to you, but I think my local ethnic food shop (not run by Russians :)) also fiddles with best before dates.. they also routinely have out-of-date perishables on their shelves... and we're talking seriously out of date, not just one day out or something. They probably think not everyone will notice. Just something we all have to be aware of when buying food sourced from overseas, particularly where it's not from a major supermarket chain.

Have you looked for Russian rye flour online? You may be able to find something quite similar, or perhaps even the same brand if you're lucky. Yours is called Ryazanochka

Best of luck!

Thanks for that! It is funny at this point. I will look now that you have so kindly given me the name. My other Rusdian market will not carry rye flour because they make bread. That is hat she said " buy my bread! " so I do because it is outstanding!

I have no bias against anyone I hope ..I am kind of a " mule" myself

I made Eric's favorite rye with it today. This brand is just so versatile!

Oh and re the outdates ..I never freak out about it unless like you said it s very outdated. These were as well.

Thanks again it is really nice to have a name to go ith these beautiful bags of flour.

What a bad experience you had in that store!

In Germany medium rye is very popular and you can get even two types in the supermarket. I ordered some from the NYBakers, did a side by side test with the German rye type 1370 I had brought from my last trip,  and found the NYBakers' one even better.

Happy Baking,
