Dough Kneading, Chopping technique.
Has anyone seen this before, does it have a name?

Works really well. I've used it along side Richard Bertinet slappy technique.
p.s I'm new to the forums so hello everyone :D
I didn't understand what the baker was saying, and so I don't really see the point of all that 'chopping'; it looks as if he were using the pate brisee method of making pie crusts.
The plastic bench knife is being used to stretch and mix the dough in what might be termed a "micro frissage".
