Wow! Those look amazing. I'm not even hungry but I am starving after looking at all your beautiful breads and pastries.

I have a background 20 years in resort hotels... last 10+ was at Disney World, Grand Floridian. Now I own my own shop. Up till recently, however, have never spent much time with croissants until now.

Looks like you got the croissant down pretty good.
yes, the shop is in central Florida.. we're in our first year (8 months) and are getting ready for season.
I tried many times with the croissant without success. What brought it home was the handling of the dough (temperatures of dough and roll in). Also, I'm using Plugra butter instead of supermarket butter. Not sure if TXFarmer did the same but I think it helps.
Looks to me like you have the baking part down pat. If your business skills are as good as your baking you should have plenty of success.
