what is yw?
Hi all, I have been busy reading blogs and posts, and I have noticed that many contain the abbreviation yw. Then somewhere I saw the words yeast water. What is that? is yw the abbreviation for yeast water, as WY is the abbreviation for wild yeast (as opposed to commercial yeast?)

YW is often an apreviation for You're Welcome. Not sure if this is the YW you are referring to.....

is a natural yeast culture cultivated from fruits; apples, strawberries, grapes, raisins, oranges , cherries etc and water that are fed with honey and sugar. It is used in Japan for sandwich breads. It can have explosive spring and is known for its wondefully soft, airy and moist crumb. I use it in recipies that call for commerical yeast to replace it and where a sourdough taste is not needed or wanted. ronray and teketeke blogs have much info on how to start, feed and care for YW cultures.

Ahh, thank you. I was wondering why some were callign wild yeast yeast wild...lol..then I saw someone actually say yeast water- was not sure if it was different animal all together, or simply a different name for my starter ;) I will look it up.
