Any cake bakers ever try Sweet Potato Pie Cake?
I have gone my whole life without ever trying Sweet Potato Pie. I am 37 years old and it wasnt until last Christmas I decided to make a Sweet Potato Pie, and I fell in love with it. Better than Pumpkin Pie.
Just a few days ago I made a Sweet Potato Pie Cake with Marshmallow butter cream frosting, and I swear it was the best cake I have ever had. And I make one mean chocolate cake, but the Sweet Potato Pie Cake... I can't remember ever tasting a cake this amazing.
I just want to hear from others whether or not you have tried one. If anyone wants I will post the recipe.
OF COURSE, we want the recipe... now, please and thank you. I LOVE Sweet Potato Pie! Can't imagine how great the cake will be... but with marshmellow butter cream frosting.... did I say duh!.... LOL... come on... give it up... thanks,

My frosting didn't turn out like frosting should, Im not real great at making good frosting.
Thanks for that recipe!! Can't really talk right now, I have to run to the store... have everything except the sweet potato and the marshmellow fluff! Okay, I am taking a deep breath, and relaaxxxingggg..... really this does sound good and I will try it. It sounds like it would be great to take to a dinner at a neighbors or to a potluck... by the way... to add to that sweet potato pie you just learned to love... I take a cupful of chopped pecans and cook them a bit with about 1/4 cup of brown sugar, add it about 2 tablespoons of real Southern Comfort Whiskey, or your favorite brand, the alcohol with disapate... cook gently til candied... then spoon those carefully into the center of that pie you are about to put in the oven... make about a 3 inch circle in the center...bake as usual, then when the pie has cooled... pipe around the edge of the crust with whipped cream cheese. When you cut your slice you have the crust and the cream cheese, the sweet potato, and then the glazed pecans in the center... YUMMY!!
I made this for an entry for the fair once and won a first place ribbon... it is really good.

The recipe for the frosting makes A LOT of frosting, probably cut it in half for just one 9" cake, or make a double layer? I havent done a double layer cake with this yet. Also, My frosting ended up a little runny, I know I probably could have just added more sugar, but was afraid of running out of powdered sugar.
Haven't tried cake, but would love to.
Have tried just about everything else.
One of my favorite 'diet' foods is a roasted sweet tater (~300 calories and fills you up like nothing else).
I make a sweet potato tarte. Same pie filling but with a tarte crust instead of a pie crust. Then topped with Italian meringue, which is almost marshmallow.
I make "candy" with them too. Roast them for 45 minutes at 400 F. Cool. Slice into large "chips" (1/3" thick x 2 wide x 3 to 5 long). Dust them with cinnamon sugar. Dehydrate them (in a food dehydrator) until "rubbery". So good I could eat 10 lbs of them, so I make them in VERY limited quantity.
I love sweet potatoes, That picture looks good.
Do you candy them with molassas? A friend of mine does hers that way and they were amazing.
So I have to sugar them instead.
I wish I could use molasses. That would be delicious.

since I really like sweet potato pie. Thing is, there's this Key Lime pound cake that I made a few days ago and it's occupying most of my attention for desserts just now.

Key lime pound cake sounds real good. I havent had much success with pound cakes, I have only tried making one though and just havent tried since that failure. :) But if you try this cake, you might have a new addiction. I know I have to force myself to slow down on my desserts, don't want to gain weight.
Old pound cake recipes use the measure "2 sticks of butter".
That's because a stick used to weigh 8 ounces.
Today's stick weighs 4 ounces.
If you're using an old recipe, make sure that the weight ratio is 1:1:1:1 flour:butter:eggs:sugar. (You don't have to make a 4 lb cake. A poundcake with 1/4 pound of each works fine.)

The problem I have with most cakes is that they lack flavor, sure they have sweetness, but most of them are just plain. Thats why I fell in love with this cake, full of flavor. I hope you all love it just as much as I do.

I made this Sweet Potato Pie Cake and I LOVE IT... but OMG is it gooey and rich! Of course, I had to go the two layer route so that all that Marshmellow Butter Creme icing could surround it... BEST CAKE EVER? Hmmmm, can't talk with my mouth full!

I have made this cake twice and it wasnt gooey. The first time it was fluffy, reminded me of carrot cake texture. I hope you try cooking it again. Did you poke it with a toothpick or knife to check if it was done?
My fault... I didn't mean the cake was "gooey"... the texture and the crumb were (are) awesome! It was done perfectly, has a nice little bounce to the spring... I kinda use gooey as a synomym for good... I was referring the the icing "smooshing" all in there... Not that the icing was "smooshy", don't get me wrong!! The icing is actually very, very, good... "gooey-good" not gooey-bad... uh...... The texture is a lot like carrot cake, sort of puts one in mind of that until you catch the cinnamon and sweet potato flavor... very good... NOT GOOEY AT ALL. Never Gooey... oohhh that would be bad... and this cake is GOOD!!!
