This would be my go at "baguette" ->
It is from Hamelman's "Bread" and it's the baguette with poolish recipe. Great chewiness in the crust, not bad crumb, I think I was expecting better taste - too "white bread-ish". But I've been doing a lot of whole grains and soakers lately so maybe my taste is off. I dunno, all these recipes seem like there's not enough salt in them.
Anyway, I found hamelman's great youtube on bread shaping - after I made these. Next time. Also, intentionally made short, I have a small, apartment sized oven that only fits a 15" pan
