In Search of a Recipe for "Pizza Bread"

There is a bread that is used for Italian style hot dogs (a Newark, NJ thing) and sausage. It's known in the area as "pizza bread".I originate from Newark, NJ and this could be a local bread, but now it's known throughout the NJ area. This bread is about 9" round with a hole in the middle, soft white crumb with a golden crisp crust (a sort of flatbread). It's about 1 " thick and perfect for sandwiches.  Anyone know of a recipe for this, I would appreciate it.

Thanks for your research Thomas, but this bread looks like a big, plain bagel, but softer and I don't know why, but it has nothing to do with pizza, but the name. I use to get it at Italian bakeries in the city, but they're gone now. I believe it was local Italians who created this at the bakery. It's still being made somewhere because I see it at markets and deli's but now that I bake, I'd like to make this. Something close is when I make semi enriched Ciabatta in a 9" pie pan.

It looks like a post you made last year has a picture. That might help jog someone's memory.

When researching, I did see a number of recipes called "pizza bread" made with ciabatta, but none of them looked like the above picture.

How do they use something shaped like that for hot dogs?

I have that pic on my other PC and did post it in another forum, did I post it here also? That pic is an advertisement from another local bakery not close to me. Please watch the videos in the links above and you will see how the sandwich is made. That round bread can be quartered or cut in half. A pocket is made and in go the hotdogs, potatoes onions and peppers. They are also good for cold cut sandwiches, especially my favorite, salami, provolone, ham with roasted peppers. Ok, so now you know my nationality.....LOL.

That bread kinda' looks like Po Boy or Muffaletta bread in a circular shape, at least the crumb does.

Muffaletta bread. I have a recipe for that bread, and they require sesame seeds on it. Method is a little different. I did a search on here it seems back in 2007 someone else was looking for this recipe. I just uploaded my pic on TFL, but back awhile ago I didn't know how to upload bread pics or it wouldn't go through. I found that pic on my backup flashdrive along with other picS I copied over to this PC. I hit the icon above to insert a pic but it's harder on here to do?????

In my search, that's the closest I've come to it. BTW guys, this "Italian Style" hot dog is to die for. Originated in my hometown. Check out Youtube, they have some vids on it and the links up top for what this bread looks like, thanks to Ben!

It's probably just a simple Italian white bread made with biga.

The shape is a couronne. Easy enough. Just use your elbow to make the hole. Keep it open with narrow, cylindrical ovensafe cup.

the bakeries that made this were Italian bakeries that made bread mostly. The bakeries I knew only made a limited type of  bread (long French, round Pugliese, Malfada, Scali), rolls, bread sticks and some cookies. They had nothing to do with pizza so although it could be a pizza type dough ingredient wise, it was not left over pizza dough, for sure. I will experiment and try it, as I've been doing since I got involved with making breads. I do appreciate the link!!!! I don't know how to upload a pic, but I have one of my Ciabatta bread with homemade Italian style Hot Dogs. Normally the hot dogs, taters and onions & peppers are deep fried but mine is healthier......LOL

Italian Style Hot Dogs. I cut the hot dogs up but either way, very good. First time posting a pic, hope it comes out ok! I used Ciabatta in place of the Pizza Bread that Italian Style hot dogs were made with.

These are from Addeo's too, but not sure if they are Pizza Bread.

I'm not sure what that bread is that you posted, but it's not Pizza Bread. I reposted the picture of pizza bread to compare. Now I wanna know what that bread with the big hole is???? LOL

Odd that the picture you reposted is what's called Pizza Bread. Every description I've read of it lately says it's not thick. They all say it's flat, like pita bread, which is why they call it "fat pita", because it looks like a fattened pita bread, which is a flatbread. The one in the reposted photo is 4" thick. That would make for one thick hot dog.

This is a link to see the bread and they have a link to the recipe. I've made this bread in large rounds for a Mardi Gras office party (way up north in Chicago) and it was very good.
I'd say have go at it and work a hole into the center bagel style.

So,....drop the ham add Capicola, Mortadella, Mozzerella and substitute olive salad for the peppers and it's a Muffuletta (Italian origins).

FYI,  I baked and experimented with 2 different type doughs. I first tried pizza dough and baked it in a 9" round pie pan. It came out ok but it's not the "pizza  bread" that I'm use eating for so many years. The bread was to lean for "pizza bread" sandwiches.  I suspected that the dough is more enriched than pizza dough, so the dough I made the second time was closer to white bread. This is what I thought all along and DW even remarked how good it was. We ate it tonight with sausage , peppers and onions on it. So Good! I didn't get the hole in the middle but that's ok. For those who are wondering what "pizza bread" is, it's the 9"round bread with the hole looking like a big bagel in the pic. Originated in Newark, NJ, still baked around in NJ and used for sandwiches like sausage and peppers and Italian Style Hot Dogs.

I also enrich my bread for Ciabatta adding dry milk, olive oil and sugar to the dough.

There is no authentic recipe. No recipe was put out there as many are looking for one. I just use my pizza dough recipe, FWSY adding olive oil and some sugar. As mentioned before, baked in a 9” pie pan.
