My first attempt at Nury's Rustic Light Rye
Hello TFL Bakers... I gave this formula a try over the weekend just as "Irene" was coming up the East Coast. In order to get our minds off of the Hurricanes and flooding. we had some friends over that were evacuated from their home and were staying with us so this was a good opportunity to enjoy it with friends. I followed leader's recipe and techinque and the bread came out as pretty as any loaf I've seen with a nice crispy crust and very nice open uneven crumb structure.

I made Nury's light rye (well, okay, a close approximation) this last weekend, too. That will definitely be something that I bake again!
Yours looks very good! You definitely got it shaped more prettily than I did.

What kind of flour did you use(brand/type), if I may ask?
I think I might try it.
Paul- I was very gentle with the dough while shaping , barely touched it and only pushed it into shape. Thank you.
Mr. Frost- I used a 50/50 combination of KA bread flour and their high gluten sir lancelot.

This bread of yours looks fantastic and thanks for the reminder.
I saved a post about this bread as a 'Favorite' quite a long time ago...I'm going to have to try it!
