Can't see how you could cover everything in under a year.
I know of four baking schools here in the Montreal area. One is a three year program, but that isn't only baking, it's more like a regular school. The other three are 1450-hour vocational programs (if I'm not mistaken) and take 14 months or so of full-time study.
If you already have formal training and want a focus on something specific, then that would likely be possible
SFBI - not accredited, but very highly respected. I believe the program is eight months fulltime.
