STICKY BUNS

Hi  all, jus wanted to share with you my recent sticky bun baking. I am really addicted to home made sweet rolls and buns, and these couldn't be easier to make as they're made from a no knead dough. happy to post recipe (not that i actually follow one) if anyones interested :)

I baked these while away (i know, obsessed).  i mixed up a batch of no knead in a stock pot as there wasn't a big enough bowl in the holiday house we were staying in, and made two trays of sticky buns, yummm, we had them on the beach with coffee with our friends, everyone loved :D

not sure why the first pic turned out like that, but that was straight out of the oven, before flipping them over :) they disappeared real quick! FYI the corner ones are the yummiest, i love the crispy toffee edges,mmm. :D

hi varda :) you can pretty much do anything with no knead, very versatile which is one of the things i love about it. i just mix it  up, keep it in the fridge till im ready for it.

in a large bowl (or pot) mix up:

 6 1\2 cups of flour (plain or bread flour is fine, though bread flour might need a little extra water)

1 spoon salt

1 spoon yeast

2 spoons sugar

about 1 cup milk powder

drizzle of vegetable oil

3 cups of warm water

once everythings mixed, no more dry flour, just cover and leave aside till its risen.

prepare the pan for sticky buns: spread bottom with butter, sprinkle over sugar and brown sugar, chopped walnuts/pecans (optional)

when you're ready to use it, jus sprinkle work surface with flour and the dough, roll out into rough rectangle.

spread with butter (i sometimes use margarine or oil, depending on what i have at the time)

sprinkle over sugar, brown sugar, cinnamon, and sultanas

you can also drizzle over golden syrup if you have it

but try to leave a clear line at the bottom edge of the rectangle, to help stick later.

roll it up till you have a big fat sausage, slice and place slices flat on prepared tray and bake.

try to flip them out soon out of the oven so it doesn't stick to the pan.

 

hope you enjoy, let us know what you think. sorry if my measurements aren't too precise, but i never measure, you can get away with it here, and you can play around with whatevery flavours you like. butter and choc chips would be nice too ;)
