Pan de Coco
While soaking up the sun and defrosting from a Midwestern winter, we ate at a quaint Florida Keys restaurant. They served a yeast raised bread with coconut in it that evoked the Caribbean. It was between a plain whitebread and a sweet dough. I would appreciate any comments on or recipes for this bread. The Whole Foods website had the only recipe I have been able to find that seems similar. Whole Foods describes this bread as "a Honduran staple".
