I guess that explains it - mine are only half filled (I use 9x5 pans), and it takes a while to rise the way I want before baking.
Also, my last loaf had holes, which may have been because I didn't punch down the dough enough, or I didn't roll it tightly, but it isn't because I underkneaded it, since I kneaded it longer than the recipe asked.
That's an amazing height for loaf bread. How long/high do you let it rise (in the pan) before sticking it in the oven?
I put 18 ounces dough in each pan, that comes to a shade over half way, l leave
them on the counter after a quick spray with water to rise to almost one inch at doughs highest above the tin. qahtan
