I think the lemon curd would last about a week in the fridge. I think you probably could freeze the lemon curd, but it may be a bit thinner when you thaw it.

Great idea! I don't like overly sweet cakes (or raisins in them, for that matter) and love citrus flavor. I'll definitely try this recipe.
