HELP!! Can I bake this dough tonight??
I am making Silverton's rosemary olive oil bread. It's a two-day bread, meaning that you make the dough, shape it, and then refrigerate it overnight. However, an unexpected guest has come and is excited about the bread. If I bake it tonight will the bread have under-developed flavor?
How long was initial knead?
If it was fully kneaded in the first place, then yeah, it will just have a less complex flavor. If it is a no (low) knead bread, then it probably needs the overnight rest to develop gluten. That said, if you are shaping it first, my gut tells me it is just a flavoring step and baking tonight should be OK.
It was fully kneaded, then allowed to rise for 3 hours or so before shaping. It then sits another hour to rise a bit. It's rosemary olive oil bread, so it's got extra flavoring, really. Do you think I should still let it refrigerate overnight? it sounds like you think it'll be ok to bake tonight but I'm just being careful (ok, paranoid).
I am looking at the recipe and you have already kneaded the dough for 20 minutes, risen 3 - 4 hours; cut and shaped the dough, proofed in the basket for 1.5 - 2 hours... that's the end of day one. I am not sure exactly why two days (maybe for better flavor) but I believe this dough is pretty much ready if you want to bake it, as long as you allow the dough internal temperature reaches 58F. I would say give it a go. Best of luck.
If you bake it tonight it will be really good. If you bake it tomorrow it will be even better. Bake it now, eat it now, and have a great time doing it.

It turned out great, and was a big hit. Four people devoured the entire loaf (with my homemade butter) during dinner. Thank you all for the input!
