Still lot's to learn with SD.

Well, I have my 1st SD using my own wild yeast starter. The whole journey to the first loaf has been quite a learning curve. Now I know I have a long way to go, but we ate the darker loaf with company tonight and it was pretty darn tasty. Had that SD tang to it. I'm happy, but I really want to do better. I'm thinking that elusive loaf will have me baking for years to come.

I think that's all we can do-- keep on baking in pursuit of the perfect loaf =]

I'm having fun. I need to organize things a little better though. It would be better if I could time my starter feedings with bakings. It seems like I'm forever wiping up flour and doing dishes. Not my favorite part of this experience. Dave

Yep, it's not over until the dishes are done. I just shrug it off as part of the process. One thing that does make it easier is having a Bench Scraper. I have granite counters so I use a stainless steel scraper, but they make plastic and neoprene scrapers for use on Formica counters so you don't scratch them. You can even use a plastic drywall knife that you can get at Lowes or Home Depot.
