Keto chicken waffles. Another original formula
Ingredients
2 10 oz. Cans chunk chicken
1/2 yellow onion
1/4 cup corn meal
2 LG. Egg
1/4 cup Almond flour ( more as needed)
1/4 cup ground flaxseed
3/4 Tbs olive oil
3 Tbs mayonnaise ( bring out the Best)
1/2 tsp chili powder
Sal/ pepper
Waffle iron set to high. Measure heaping 1/4 cups of the mixture press into tight little patties. Cook for 3 minutes. Allow the waffle iron to return to temperature between batches. Enjoy!
Fish feel to substitute crab or other fish.

Masa harina is made from corn that has been treated with lime. This makes the B-vitamins accessible. It also changes the taste a little. It's ground finer than cornmeal; I think of it as a flour. It will probably absorb more water than a cornmeal, and will clump together into a dough much more than cornmeal would. I make a skillet cornbread in which I use both masa harina and corn meal, though it also works well without the cornmeal.

Masa harina also has less dietary fiber than whole grain cornmeal, if that's important.
That's mostly because the outer husk gets removed as part of the lime treatment. Some might think its loss as a positive.
My gut microbiome doesn't think so—the bacteria want something to eat, too! Those short-chain fatty acids they provide are very beneficial to our health.
That translucent outer shell of a corn kernel is mostly cellulose, isn't it?
The shell on the corn kernel and other cereal grain bran is predominantly hemicellulose. The gut bacteria can ferment the hemicellulose and other resistant starches to produce short-chain fatty acids and other beneficial metabolites.

I'm less concerned about the phytates in the bran than I am about maintaining the healthy bacteria; we're just now learning the benefits of these metabolites.

but if you are making Corn tortillas you cannot use corn meal in place of masa. So it's a one-way street. c
