How do you smoke your chicken? Whole or just the breasts (skin on or off?) I just got a smoker but I'm looking for alternatives to charcoal bricks because of their cancer risks. Not sure what alternatives to use. Maybe woodchips? I'm also looking for cheaper options so I might even have to look into making my own charcoal.

As Ian mentioned, I use a pellet smoker. It is easy and convenient. So, I can smoke even small chicken parts. This particular smoke was a small, whole, full fat, spatchcocked chicken. I ate the bottom half for dinner. You should look into a pellet smoker, they are gaining favor. Even in competitive smoking! The whole wheat bread formula is my pleasure to share.
