I just read the whole book and I particularly appreciate the science part of starter and baking. I haven’t used that basic science in a long time, and it was all explained quite well.
I’m new to baking in general but with wheat and dairy allergies for 20 plus years and now lectin intolerance, I finally decided I needed to learn to feed myself better.
Thank you, and any of you culinary trained folks who bake gf/df/lectin free; know that you are appreciated by a very grateful minority.
