In this Bread Code video what kind of whole wheat flour is this? It contains large brownish yellow particles (as can be seen at 9:29 in the video, as well as other places). I thought that this might be a German flour. In the comments he states that it's strong whole wheat flour with about 14% protein. I now mill my WW flour and used to buy commercial WW flour. I can't recall ever seeing such a texture.

I guess, this large "particles" are because of the milling process. Maybe the outer part of the wheat grain is separated from the rest at the beginning, milled coarser than the rest and at mixed again together at the end ???
Thanks. I didn't notice that link to the flour. Looking around the manufacturer's site, I found that they offer a coarse bran product. The maximum size of the bran is 2000 micrometers, which works out to about 1/6 inches. Allowing for expansion due to liquid absorption could account for the particles in the dough.
