When I saw the title I was expecting to see a crust made with zucchini "flour". I've recently seen FB ads about this "Amish" flour of dehydrated and pulverized zucchini that is a substitute for AP flour. I have my doubts as to how they are claiming it is used. I would think that once it rehydrates in dough it would act like applesauce. No structure in zucchini, AFAIK.
However, your dough looks intriguing. It is definitely shredded zucchini but what is it incorporated into? A flour-based dough/batter? Eggs? Cheese? Please share!
It looks to me like Will shredded it and just packed it into the pie dish? But I'm sure there is more to the black magic.
The mind boggles, how would the Amish make flour from veggies, without say dehydrators and electric mills / grinders / food-processors! From grains I understand, but veggies...
I used to make a spaghetti pie using the same idea-eggs and cheese mixed and poured over cooked spaghetti and put into a pan to top like a pizza. Of course, that is high carb. I imagine this can be done with any veggie. Great idea.
My daughter in law does the cauliflower crusts. They brown quite nicely because way less water than the zukes. Maybe give it a try!
Back in a different life I was ricing cauliflower, before it was available pre-packaged. Cauliflower crust will definitely be next!
