Normally, I would not ask this question as most wood could use mineral oil every now and then.I'm afraid breads won't easily slide off the wood peel if oiled. Oil is only needed for protection in wet situations - not something a peel normally experiences.I would just use some fine semolina mixed with rice flour on the peel before putting your dough on.
