Lemony Kugelhopf with CLAS

I have been wanting to make Yippee's spectacular Le Cordon Bleu Lemony Kouglof

and so here is my loaf.  Foodgeek Recipe is here.

 

No fancy mold pans but the bake fills the air with great buttery goodness. I used Costco's AP flour (25 lb bag) and for milk, evaporated milk diluted 1:1 with water.

Amounts:  450 gr AP flour and 40 gr clas, 2-1/3 tsp dry yeast SAF.  Total dough weight 1120 gr. - I think 350g AP would be enough to fill the pan.

Clas makes it a fast bake (oven this time, but Zoji next time)!!

It is a winning recipe- the proof times are relatively short.  Thanks Yippee for a super recipe!!

Slices are 3.75" (base) x6" tall

You can tackle a panettone recipe now, don't you think?

Hi Yippee,

I did try the clas Panettone but I'll be sticking with your recipe- so nice, tall, airy, yellowy and rich--and fast!
