I did a search for “baked bread oven humid vs steam” and found this site. Apparently just what I was looking for!

I’m very much a pandemic bread baking noob. I’ve learned most everything I know from Bake with Jack (Jack Sturgis) on youtube (love the guy). Up until recently, I spent the last 2 years trying to master the basic white sandwich loaf (just baking every now and then). But now I’m baking more regularly and have tried whole wheat, then enriched, and now have made kolache buns stuffed with ham and cheese!! 😍😍😍

So, I’m falling in love with baking, which I never thought would happen. I’m NOT a recipe person, but I’ve found with bread, once you know the principles the options are endless and you can freestyle! I love it!
